Dijon Chicken & Mushroom Rice Pilaf

1 lb chicken breast1/4 c milk1/4 c Dijon mustard1/4 c breadcrumbs1/4 c grated parmesan1 T olive oil1 clove garlic, minced1/2 c onion, minced2 c mushrooms, sliced3/4 c uncooked brown rice1 1/2 c chicken broth
For Chicken:
Preheat oven to 375. Spray baking pan with non stick spray. Whisk milk and Dijon in a shallow dish. In another shallow dish mix together the breadcrumbs and parmesan. Dip each chicken breast in Dijon mixture and then roll in breadcrumb mixture. Bake 30 minutes or until cooked through.
For Rice:
Saute garlic in onion in oil over medium heat for 1 minute. Add the mushrooms and cook another 3-4 minutes. add rice and cook another 2-3 minutes stirring constantly. add broth and bring to a boil. lower heat, cover pan and simmer 20-30 minutes until rice is tender.
