Holiday Refrigerator Cake

1/2 lb. Marshmallows, Quartered1 C. Fat-Free Half-and-Half1 C. Graham Cracker Crumbs1 C. Chopped Candied Cherries1 C. Chopped Candied Pineapple1 C. Dates, Pitted & Chopped1 C. Chopped Salted Pecans2 tsp. Orange Zest2 tsp. Sherry
1. Heat marshmallows & half-and-half over low heat, folding over & over until marshmallows are half melted. Remove from heat, & continue folding until mixture is smooth & fluffy. Cool.
2. Add 3/4 C. graham cracker crumbs, fruit, nuts, orange rind & sherry to the marshmallows. Stir to combine.
3. Sprinkle a buttered loaf pan with 1/4 C. graham cracker crumbs, then pour the marshmallow concoction over crumbs. Chill thoroughly.
