Artichoke Lemon Shrimp Pasta

Ingredients
2 tbsp Olive OilWhole Wheat Spaghetti, cooked (pasta), 2 cup 24 medium Shrimp 1 dash black Pepper2 tsp fresh Thyme 3 cloves of Garlic1-14 oz can Artichoke Hearts1Lemon4 fl oz White Wine 1/2 can (10.75 oz size) Chicken Broth 4 tbsp grated Parmesan Cheese (optional*)*nutrional info is calculated with this ingredient
Directions
Boil Water for pasta and cook pasta according to package directions. (20 min.)
Right before you drop the pasta start to saute Garlic in Olive Oil. Add Artichokes, Pepper, Thyme and juice of half a Lemon. (3 min.) (drop pasta) Add White Wine and Chicken Broth. Bring to a bubble. (5 min.)
Slice remaining lemon and add slices to pan.
Add Shrimp and cook until pink. (2 min.)
Top Pasta with Shrimp, Artichoke and Sauce.
Sprinkle with Parmesan Cheese (optional)
Divide into 4 portions and Enjoy!

    This was delicious, light, and could be altered easily by adding more veggies. I added red pepper flakes along with the parmesan to spice it up a bit after cooking. Definitely will make again. - 7/28/08
