Celery root remoulade

Ingredients
1 celery root, peeled and sliced in to thin matchsticks (yields approximately 4 cups)1 container 0% Fage Greek yogurt, or creme fraiche (8 oz; reduced fat sour cream okay)Salt & pepper to taste1 tbs grainy mustard1 tbs dijon mustardJuice of one lemon2 tbs fresh choppped parsley
Directions
Place sliced celery root, well salted, in colandar and drain for ~ 30 minutes. Squeeze out excess liquid and pat dry.
In bowl, whisk together yogurt, msutards, lemon juice and parsley. Add salt, pepper and celery root. Adjsut seasonings. Let sit in refrigerator for at least a few hours, preferably over night.
