Rumbamel's Fresh Broccoli Sunflower and Bacon Salad with Cranberries

-4 cups chopped fresh broccoli-1/4 C chopped onion, I used white, but a bunch of green can be used or red is often used-1/8 C or 15 g dried cranberries -1 1/2 T Canola Oil-1 1/2 T Red Wine vinegar or other vinegar of your choice-1 T granulated sugar-1/8 C or 15 G Roasted and salted sunflower seeds-1 1/2 T real bacon bits
---Wash and chop your broccoli if you haven't already. Blanch your broccoli for 30 sec. in boiling water and then quickly cool it in an ice bath then drain and dry it on towels or paper plates. Make sure it is dry before you transfer it to your bowl.
---Mix your broccoli, onions and cranberries in a bowl. If you want you can also add your bacon and sunflower seeds now. Some like to just sprinkle them on top after the dressing.
---In a smaller bowl, whisk your oil, sugar and vinegar well and then drizzle it over your broccoli mix. Toss your salad and enjoy.
---Makes 5 servings of 3/4 C each.
