1 wedge Laughing Cow Creamy Swiss Cheese 2 tsp Parmesan Cheese, shredded1/2 tsp chopped Garlic1/4 tsp Garlic powderdash Pepper, black1 cheese stick (such as Sargento Natural Blends Provolone-Mozzarella)1 pita (such as Josephs Flax, Oat bran & Wheat)2 oz Chicken Breast, no skin2 Tblsp diced Tomatoes2 Tblsp Basil, fresh, torn Optional topping: red pepper flakes
Preheat oven to 375 degrees.
Combine cheese wedge, 1 tsp parmesan, the chopped garlic, 1/8 tsp garlic powder and black pepper. Stir until smooth.
Break the string cheese into thirds and blend at high in a blender or food processor until shredded. (Or pull into shreds and roughly chop).
Place pita on baking sheet coated with nonstick spray. Even spread with cheese wedge mixture and sprinkle with shredded cheese, leaving a 1/2" boarder. Top with chicken and sprinkle with remaining 1/8tsp garlic powder. Top with tomato, basil and remaining parmesan.
Bake until hot and lightly browned, 10-12 minutes.
