Ingredients
2-3 zucchini or summer squash2 sweet onions1 sweet potato1 red bell pepper1 orange & 1 yellow bell pepper5 tbl balsamic vinegar12 oz mushrooms quarter 1/4 c olive oil
Directions
chopped veggies in equal pieces - 1-2 inch pieces toss with olive oil and then add oil - and bbq or roast in 400 oven until to desired tenderness
