1 cup Quinoa1 cup chopped carrots (2 carrots approx)1 cup copped onion (1 med)1 cup edemame2 cups Chicken stock/brothpinch of salt & pepper2 tbsp. Buttery spread1 tbsp. OO
heat skillet w/buttery spread and OO on medl. heat. Add onions, saute 5 mins. Add carrots, suate 2 mins. Add salt, pepper, stock and quinoa. Bring to boil. Add Edamame. Simmer for 15 - 20 mins or until all liquid is absorbed. Let stand for a few minutes off heat and then fluff.
