Organic Hippocrates Soup

  • Number of Servings: 6
Ingredients
1 Leek1 small Celery Root1 onion2 sweet potatoes3 medium tomatoes1 bulb of garlic (about 10 cloves)1 parsnip
Directions
Wash vegetables
Cut up veggies
Put in pot / dutch oven
Cover veggies in water
Once water boils, simmer for 1 1/2 - 2 hours
Once done, either eat or put in food mill

Serving Size: Makes approximately 6 1-cup servings
