New Bride Chicken Curry

Ingredients
4 tbsp canola oil2 medium yellow onion finely chopped2 tsp grated garlic (4 cloves)1 1/2 tsp cayenne1/2 tsp ground turmeric1/4 tsp ground cumin1 cup plus 1 tbsp hot water divided3 medium tomatoes mincedChicken1 1/2 tsp salt1 tbsp apple cider vinegar1 tsp sugar
Directions
Heat oil in a large pan over medium/high heat and saute the onions until they turn dark brown. Mix the garlic, cayenne, turmeric, and cumin with 1 tbsp of the water to make a thick paste. Add to the browned onions and saute for 5 minutes. Add the tomatoes and stir constantly over medium heat until the tomatoes start to break up, about 2 minutes, making sure the mixture doesn't scorch. Add the chicken and mix to coat with spice paste. Stir over medium heat for about 10 minutes. Add the remainig 1 cup of water and salt and bring to a boil. lower the heat and simmer, uncovered, untill the chicken is cooked through, about 30 min. add the vinegar and sugar, simmer about 1 min then taste. adjust the salt, sugar, and vinegar if needed. Should be sweet and sour and spicy-hot.
