Split leeks and clean well.
Chop green leaf part off leaving about 1 inch of green above white stem. Remove roots.
Finely chop leeks.
Peel and (very) finely slice potatoes.
add butter to pan and sweat leeks without browning.
add potato slices and sweat 3-5 minutes.
add stock and salt and simmer for 40 minutes on medium heat
remove from heat, puree soup w/ blender then strain.
chill soup well, add cream before serving
Serving Size: makes 8 medium sized bowls
