Cauliflower Ginger Soup

1 large onion, chopped1 large carrot, diced2 tsp. grated ginger2 garlic cloves, minced1 T. olive oil1 large head cauliflower, cut into florets4 c. chicken or veggie stock2 c. shredded cheese (optional)*
Heat olive oil in dutch oven over medium heat. Add onion, carrots, ginger, and garlic. Cook till carrots are soft, about 7 minutes. Add 1 c. stock and cauliflower. Cover and let cook 5 minutes. Add remaining stock and cook till cauliflower is soft, about 10 minutes. Puree soup with immersion blender and stir in cheese if using. Serve immediately.
