Tortilla Soup for a Crowd

Ingredients
18 oz. boneless, skinless chicken breasts, cooked and cut into 1" pieces1 T olive oil1 large onion, diced3 cloves garlic, minced or pressed1 32 oz. can whole tomatoes with juice2 cans diced tomatoes with green chilis2 cans light and fat free chicken broth1 can black beans, rinsed and drained1 can sweet corn, rinsed and drainedjuice of 1 fresh lime1 tsp. cumin1/2 tsp. sugar1/4 cup chopped cilantro, or more to taste
Directions
Put olive oil in a large pot with the chopped onion. Saute until softened then add garlic for a minute. Add all other ingredients, except cilantro, bring to a boil then lower heat and cook for 15 minutes. Add cilantro and continue to simmer for another 15 minutes.

Serve with: grated cheese, chopped avocado, tortilla chips or strips of tortilla. (Extras not included in calorie counts.)

**I usually marinate my chicken in the McCormicks Chipotle Pepper or Baja Citrus marinade then cook it on my grill.

Makes 12 one and a half cup servings.
