Banana Bread

3 to 4 medium bananas, mashed 1/3 cup water1 cup Splenda 1/3 cup vegan margarine, softened1 2/3 cups (220 g) unbleached white flour 1 tsp salt 1 tsp baking soda1/2 tsp baking powder 1/2 cup (55 g) chopped walnuts
Preheat oven to 325 degrees convection. Grease loaf pan.
In a small bowl, mix the bananas and water. Set aside.
In large bowl, mix sugar and margarine until blended. Add bananas and water and mix thoroughly. Stir in remaining dry ingredients until moistened. Do not over mix. Add walnuts. Pour into prepared pan.
Bake for 1 hour or until a wooden toothpick inserted in the centre comes out clean. Remove from oven and allow to cool before serving.
Serving Size: Makes 1 loaf - 8 Servings
