Avocado and Pineapple Salad Cuban Style

1 large head of iceberg lettuce, shredded1 medium sweet red onion sliced thin1 large Florida avocado, peeled and chunked2 cups of fresh, ripe pineapple chunkssalt and pepper to taste1/3 cup of extra virgen olive oil1/3 cup of white vinegar1/3 cup of sugar1/3 cup of fresh squeezed orange juice1 ounce or so of fresh lime juice
This odd but delicious salad has been a staple in my mom's Cuban-American kitchen since I was a child. Buy the freshest ingredients for the best flavor ! enjoy !
Mix the extra virgen olive oil, fresh squeezed orange juice, vinegar and sugar in a blender until it is smooth. Add the salt and pepper to the mixture(to taste). Toss the lettuce, red onion and pineapple, and avocado chunks together. Dress the salad with the olive oil mixture.
Lightly season again with a dash of salt, pepper and lime juice.
Serves 6 to 8
