Pork Chops Dijon

Ingredients
4 Pork Loin Chops cut 1/2 - 3/4 inch thick1 Tablespoon cooking oil3 Tablespoons Dijon-style mustard2 Tablespoons low-carb Italian dressing1/4 Teaspoon black pepper1 medium onion sliced
Directions
1) In large skillet cook meat in hot oil over medium-high heat for 5 minutes or just brown, turning once. Remove from skillet. in a small bowl combine mustard, Italian dressing, and pepper, set aside.

2) Add onion to skillet. Cool and stir over medium heat until softened (3-5 minutes). Push onions aside; return meat to skillet. Spread mustard mix over meat. Cover and cook over medium-low heat for 10 minutes or until done (160 degrees F). Serve onion over meat.
