Watermelon soup

Ingredients
5 Cups yellow or red seedless watermelon, diced1 tablespoon chopped fresh mint1 teaspoon sugar1 fluid oz fresh lemon juice1/2 cup lightly sweet white wine (such as Riesling) 1/2 teaspoon chopped ginger4 teaspoons crumbled feta1/8 cup sparkling wine (or sparkling water)
Directions
Combine 1 cup of the watermelon with mint and sugar in a bowl. Set aside. Blend remaining watermelon, lemon juice, wine, and ginger in a blender until smooth. Let sit 1/2 hour. Strain soup; divide among 4 bowls. Top each with reserved watermelon and 1 oz feta.
