Zesty Italian Chicken & Rice Skillet

Ingredients
1/3 cup Kraft Zesty Italian Salad Dressing1 lb. boneless skinless chicken breast, cut into chunks2 tsp. dried oregano4 cups cut-up fresh vegetables, such as broccoli, carrots, or green pepper1 can (14.5 oz) reduced sodium 99% fat free chicken broth2 cups Minute Brown Rice, uncooked
Directions
Heat dressing in a large skilled on medium heat. Add chicken; sprinkle with oregano. Cook 5 minutes until chicken is no longer pink.
Add vegetables and broth. Simmer 5 minutes. Stir in rice & cover. Simmer 5 more minutes. Turn off heat and let stand, covered, 5 minutes or until liquid is absorbed.

    This was definitely a very healthy recipe, and my 18month old loved it even with all the veggies, but My husband and I thought that the brown rice and chicken breast together made it VERY dry and kind of boring. It was definitely edible, but I probably wont make it again. - 6/26/08
