Doubled Sourdough Pancake Recipe

Ingredients
1.5 cups sourdough starter3 cups warm water1.75 cups white flour1.75 cups whole wheat flour4 eggs1.5 teaspoon salt1.5 teaspoon soda3 tablespoons sugar1/3 cup homemade (unsweetened)applesauceup to 1 cup white flour to 'thicken' it up for pancake battercinnamon, nutmeg, almond extract or other spices to taste
Directions
Combine, cover and set first four ingredients in a warm place overnight.

In the morning, combine the last five ingredients to sourdough mixture. Mix well but don't beat. Add your preferred spices. Cook in non-stick skillet over medium heat (I use the lid to help cook more thoroughly). They will take longer than regular pancakes. Using a 1/4 cup measuring cup, will make approximately 36 pancakes.
