Cherry Pie3 cups frozen sour cherries, thaw and save 3/4 cup of the juiceAdd 1/2 cup sugar3 tsp Sweet & Low sugar substitute3 Tble quick-cooking tapioca10 drops red food coloring3 to 4 drops almond extract (optional)dash salt (optional)Combine all ingredients into bowl and let sit for 20 minutes. Meanwhile, make the crust.Crust1 cup sifted all purpose flour3.4 cup unprocessed wheat bran3 Tbls ground flax seed1/2 tsp saltscant 1/2 cup shortening5 to 7 Tbls watermix dry ingredients together; cut in shortening with pastry blender until pieces are size of small peas. Sprinkle 1 Tbls water over mixture, gently toss with fork. Repeat until all is moistened enough to roll outRoll half the dougn between two floured sheets of wax paper. fit to 10" pie plate. Roll remaining dough for the top, or can be cut for a lattice top.Fill pie with cherry mixture, dot with 1 Tbls butter. Adjust top or make lattice top. Crimp edge high. Cover edges with foil. Bake in 400 degree oven for 55 minutes. (Remove foil during last 10 minutes.) Let rest for 30 minutes.
