Quinoa salad with spinach, almonds, feta and cranberries

Ingredients
Red quinoa 1/4 cup dryFresh spinach 2 cupsAlmonds, sliced and toasted 1/3 cupFeta cheese, crumbled 1/2 cupRed onion, thinly slicedDried cranberries, pomegranate infused 1/3 cupVinaigrette:Olive oil, 2 TbspRed wine vinegar, 2 TbspDijon mustard, 1/2 tspHoney, 2 tsp
Directions
Cook the quinoa and allow to cool. Fluff with a fork
While quinoa is cooling:
In a small bowl whisk together the olive oil, vinegar, Dijon and honey. Set aside.

Put the spinach in 2 salad bowls
Add the quinoa, toasted almonds, feta and cranberries
Serve salad with vinaigrette on the side
