Low Fat Chicken Caesar

Ingredients
I prefer to use a mixture of Iceberg & Cos lettuce for variety in place of Romaine.
Directions
Cut chicken breast into thin strips and dice onions and mushrooms.
Melt butter in pan ( you can use olive oil however butter gives the mushrooms a fuller flavour) and gradually add chicken, mushrooms and onion cooking on low heat.

Shred lettuce and place into salad bowl. Mix in bacon bits, cooked chicken mix.

Stir in desired amount of Caesar dressing

Grate parmesan over salad and toss through croutons.
