Fiesta Chicken Salad

Ingredients
4 cups Torn or Chopped Romaine Lettuce1 15oz can Black Beans1 pint Cherry or Yellow Tomatoes sliced in half1 C. Sweet Corn (fresh or frozen and thawed)1/2 C. Shredded Cheddar Cheese2 Cooked Chicken Breasts (or 2 C. leftovers)1 C. Salsa1/2 C. Reduced Fat Sour Cream
Directions
Drain and rince well, 1 15 oz can of black beans
In a large salad bowl add, torn or chopped lettuce and top with, black beans, sliced tomatoes, corn, cheese and diecd or shredded chicken.
In a medium bowl, mix together the salsa and sour cream adding Extra Virgin Olive Oil to thin if needed.
Serve salade in 4 large bowls and toss with salsa dressing.
Top with corn tortilla chips if desired.
