Slow cooker Red wine ratatouie chicken

Ingredients
Chicken Thigh, 6 thigh, bone and skin removed Canned Tomatoes, 2 can Eggplant, fresh, 1 eggplant, unpeeled Zucchini, 2 cup, sliced Thyme, fresh, 2 tsp Salt, 1 dash Pepper, black, 1 dash *Lemon Juice, 1 lemon yields Red Wine, 1 glass (optional but really adds to the flavour) Green Peppers (bell peppers), 1 cup, strips
Directions
place all ingredients in slow cooker, turn cooker on :) cook for 4 to 6 hrs depending on your cookier. Can also be done in the oven.
