Paleo Mashed Root Vegetables

Ingredients
3 turnips, peeled and chopped small2 large parsnips, peeled and chopped small1/4 cup chopped onion2 tbsp coconut oil
Directions
Preheat oven to 400

Chop vegetables. Toss in olive oil.

Bake on sheet at 400 for 35-40 min or until soft. The smaller you chop the vegetables, the shorter the cooking time.

Process in food processor.

Serving Size: makes 4 servings, roughly 1/2 cup each
