Winter Squash Soup

2 packages frozen Cooked Winter Squash (12 oz each)2 tbsp Smart Balance Light Buttery Spread3 cups Low Sodium Chicken Broth.5 cup Light Brown Sugar, unpacked1.5 cups Apple Sauce, Unsweetened2 tsp Ground Nutmeg2 tbsp Corn Starch4 slices Turkey Bacon, cooked
Makes 5 bowls of soup.
Combine squash, chicken broth, and smart balance in large pan over high heat.
Bring chicken broth to boil, continue boiling for 5 minutes stirring occasionaly.
Reduce heat to medium, stir in brown sugar, applesauce and nutmeg.
Dissolve corn starch in a small amount of water and stir into soup.
Cut up the cooked bacon slices and add to soup.
Contine simmering and stirring for 5 more minutes.
(Also good if you saute onions in smart balance before adding the chicken broth and squash. Or throw in some leftover turkey with the bacon.)
