Jamie's Monster Meatloaf Recipe

Ingredients
1 12 oz package chopped onions and peppers, thawed 9 or 1-1 1/2 cup fresh)1 tsp salt1 tsp pepper1/2 tsp thyme,dried1 tsp minced garlic1/4 cup low-sodium soy sauce3/4 cup low-sodium chicken broth2 tsp tomato paste3 lbs exta-lean ground turkey ( or chicken)1 cup quick cooking oats4 egg whites1 cup reduced sodium ketchup
Directions
1/ Preheat oven to 350 degrees. Prep 9x13 dish with non-stick spray.
2/ in a large saute pan, cook the onions, peppers, with salt, pepper, and thyme until onions are translucent ( about 5 min).
3/ Add garlic, soy-sauce, chicken broth, and tomato paste, mixing until heated through. Set aside to cool.
4/ In a large bowl, combine ground turkey, egg whites, oats, and sauted mixture. Mix by hand until all incorporated and press flat into the pan.
5/ Spread ketchup in an even layer on top of the prepared turky mixture and place into oven to bake for 1 hour, and 20minutes.

    Love Jamie Eason's recipes!! This one is AMAZING! I agree the 24 original servings are to small but adjusted is great. I also leave out the broth and shredded zucchini in there and it was wonderful!! - 3/23/13
