Spicy Shrimp "Sushi" Patties

Ingredients
6 1/4 oz raw shrimp, peeled and deveined4 1/4 oz raw chicken breast1/2 c panko bread crumbs1 egg1 tbsp mayo1 tsp siracha sauce, or to taste1/2 tsp lemon juice1/4 tsp stevia1/2 tsp soy sauce
Directions
Preheat oven to 400 degrees

Grind chicken and shrimp in food processor or chop until very fine
Transfer to medium size mixing bowl
Add in remaining ingredients
Mix with a fork or by hand until completely combined
Let rest in fridge for 30 minutes
Form in to 6 equal size patties
Brush small baking sheet with 1 tsp olive oil
Place patties on baking sheet and bake for 12-15 minutes
wrap each patty in 1/2 sheet nori
Serve warm or at room temperature

Serving Size: Makes 6 patties for 2 entrees or 3 appetizers
