Ingredients:2 TB Chia Seeds1/2 c Almond Milk2 T Butter, salted2 t Vanilla Extract2 Eggs1/2 c Applesauce, unsweetened1/4 c Coconut, shredded (unsweetened)1/4 t Cinnamon1/2 c Hodgson Mill Whole Wheat Pastry Flour1/2 c Hersheys Special Dark Cocoa 100% cocoa1/3 c Dark Brown Sugar1/4 c Ghirardelli 60% Cacao Dark Chocolate Chips1/2 t baking soda1/2 t saltYou can add chopped nuts, but this isn't included in the totals
Soak the chia seeds in the almond milk for 10 minutes, while you add the butter, vanilla, eggs, applesauce, coconut, and cinnamon to a blender. Blend to mix, then add the chia mixture and blend again. Combine the rest the the dry ingredients in a bowl, then fold in the blender contents. Put this in a greased 8 x 8 pan and bake at 350 degrees for about 30 minutes.
