Chinese Fried Rice

3/4 cup finely chopped onions2 1/2 tablespoons olive oil1 egg, lightly beaten3 drops soy sauce3 drops sesame oil8 ounces cooked chicken, chopped1/2 cup chopped carrots1/2 cup frozen peas, thawed4 cups cold cooked rice2 tablespoons soy sauce (add more if you like)
1. Heat 1 tbsp oil; add chopped onions and stir-fry until onions turn a nice brown color--about 8 to ten minutes. Remove.
2. Mix egg with 3 drops of soy and 3 drops of sesame oil; set aside.
3. Add 1/2 tbsp oil to wok or other cooking pan, swirling to coat surfaces; add egg mixture; working quickly, swirl egg until egg sets against work; when egg puffs, flip egg and cook other side briefly; remove from work, and chop into small pieces.
4. Heat 1 tbsp oil; add meat, carrots, peas, and cooked onion; stir-fry for 2 minutes.
5. Add rice, tossing to mix well; stir-fry for 3 minutes.
6. Add 2 tbsp of soy sauce and chopped egg to rice mixture and fold in; stir-fry for one minute more; serve
