Meatloaf with Sweet & Spicy Glaze

2# 93% Lean Ground Beef1/2 c. egg beaters1/4 c. finely chopped onion1/2 TBS salt2 TBS. Worchestershire sauce1/4 tsp. white pepper1 c. dry, plain Bread Crumbs(or seasoned, if preferred)SAUCE:1/2 c. ketchup1/4 c. Splenda Brown Sugar2 tsp. ground mustard powder2 jalepeno peppers, minced(optional)
In a mixing bowl, combine the egg beaters, onion, worchestershire sauce, salt and pepper. Mix well, then stir in the bread crumbs. Next, mix in the beef, using your hands to make sure all ingredients are well blended. (If mixture seems too dry or thick, add water, 1 TBS at a time, until your loaf mix is the consistency you like).
Spray a 13X9 inch or larger pan(I use a lasagna pan) generously with PAM cooking spray. Place meat into the pan and shape into a loaf( I make mine nice and long to get 9 good sized slices) . Bake in a 350 degree preheated oven for 55 minutes. (Cooking time may vary depending on your oven but 50 to 55 minutes is usually good)
Meanwhile, make the glaze by mixing the ketchup, Splenda Brown sugar, and dry mustard. Wisk until well blended. If you desire, add 1-2 minced jalepeno peppers to the sauce, tasting as you go until you get the amount of heat you want. It is just as good without the peppers if you have little ones eating it.
After 50 minutes, brush it on the meatloaf and cook for an additional 10 minutes. Remove meatloaf from the oven when done, and allow it to sit @5 minutes before cutting. Cut into 9 equal slices.
