Chicken and Veggie Stir Fry

Ingredients
Ginger Root, 1 tspGarlic, 3 clovesShallots, 1 tbsp choppedBroccoli, fresh, 1 stalkSweet Corn, Fresh, 1 cupCarrots, raw, 1 cup, choppedChicken Thigh, 3 thigh, bone and skin removedSoy Sauce, 1 tspFish Sauce, 1 fl ozBrown Rice, long grain, 2 cups
Directions
Boil rice according to general directions-1 cup rice to 2 cups water. Approximately 20 minutes.

Sautee ginger, garlic and shallot. Add chicken and brown thoroughly. Remove chicken and add veggies. Deglaze the pan with water and add back the chicken. Add soy sauce and fish sauce to taste. Cover and let simmer for a couple of minutes. Serve over rice.
