Crustless Greek Quiche

5 fresh large eggs1 medium chopped plum tomato (about 3/4 c)1 c - baby spinach chopped or torn1/4 c - Feta Cheese crumbled1 c - chopped baby bella mushrooms2 tsp - minced Garlic1/4 c - Brown Rice flour1 tbsp - Olive Oil3/4 c - Almond Milk, Unsweetened OriginalAdd seasoning to taste:I used parsley, basil, salt, pepper, oregano, onion and paprika.
Set oven to 350 degrees
Lightly spray an 8 x 8 pan with PAM olive oil
Chop veggies and spread even in bottom of pan with feta cheese.
Whisk eggs, milk, olive oil, seasoning until light and well mixed
Whisk in flour and pour over veggies.
Bake for 45 minutes or until lightly browned.
Let set for 5-10 minutes.
Serving Size: 16 2 inch pieces
