Ingredients
1/3 cup - Brown Rice (cereal or just rice, can substitue with quinoa or steel cut oats)1/4 cup - Frozen Blueberries (or berries of choice)1 tbsp - Ground Flax powder1 tbsp - Ground Sunflower Seeds1 tbsp - pine nuts/nut of choice (optional)1/4 cup - Soy/Rice Milk (unsweetened)2 tbsp - Yogurt (soy or regular) - optional
Directions
Makes 1cup serving

-Cook Rice (can be mushy or firm- can be cooked the night before and warmed for breakfast)
-Add remaining ingredients and stir
-Top with Yogurt for added pizzazz

    We fixed this with triple the blueberries to make a full fruit. We liked it and will fix it again. We used vanilla rice milk since that is what we had on hand. We ground the pine nuts as well as the sunflower seeds (the flax seed was already ground. - 4/27/10
