Lemon Essence Vanilla Cupcakes - with Coconut and Almond Flour

Ingredients
Mix: 5 eggs1 tsp vanilla extract1/8 tsp salt2 T maple syrup3/4 tsp liquid vanilla stevia1/2 tsp baking powderAdd: 2 T almond flour6 T coconut flour6 T coconut oil (or butter)
Directions
Blend well, until all lumps are gone (hand mixer on high). Fill greased mini muffin pan cups 3/4 full (one heaping Tbsp in each). Smooth out batter (it will be thick). Bake at 400 degrees for 10 minutes.

    The texture of these are light and fluffy, they dont rise much and i didnt have liquid stevia so i added more mapel syrup, i think i might add some splenda next time, made a simple creme cheese frosting, I will definetly make them again.
