Zesty Greek couscous salad

Ingredients
1 package near east couscous original plain1/4 teaspoon black pepper2 tablespoons lemon juice3 tablespooons olive oil2 large tomatoes chopped1 med zucchini halved and thinly sliced1/2 cup fresh basil, cut into strips1/3 cup green onions, sliced3/4 cup crumbled feta cheese
Directions
Prepare backage of couscous as directed except omit butter or olive oil and add black peper with water.
In large bowl, combine prepared couscous, lemon juice and olive oil. Add tomatoes, zucchini, basil and green onions.
Chill 4 hours or overnight
Stir in cheese just before serving. Serve over lettuce if desired

    I know this recipe comes from the Near East box because I made it myself. Not sure why, but it really doesn't have much flavor - one family member said to add more lemon juice. Not sure if that would enhance it or not. I will probably make it again just because it's healthy. - 5/9/11
