White Bean + Tuna Salad

Ingredients
1 cup of chopped red onions or shallots1 Tbsp lemon zest2 Tbsp lemon juice2 (6oz) cans of tuna packed in water2 (15oz) cans of cannellini beans, rinsed + drained2 Tbsp dried parsley1 tsp red chile flakes1/2 tsp black pepper1/4 tsp salt
Directions
Sprinkle some of the lemon juice over the chopped onions while you prepare the other ingredients.

Drain the tuna and put the tuna into a large bowl. Add the beans to the tuna and gently stir to combine. Add the onions, parsley, black pepper, lemon zest and lemon juice and mix to combine. Add red pepper flakes and salt to taste. Chill before serving. This salad will last several days in the fridge, tightly covered.
