1 Can Black Beans 1 Can Corn (Drained)1 Tbsp Olive Oil1 small onion diced2 Cloves garlic - mincedHandful of fresh spinach.1 Tbsp Ground Cumin (i've never actually measured how much I put in...depends on the day)salt/pepper to taste1 Tsp Chili Powder (Optional)
Saute onion and garlic in olive oil until soft.
Add beans, corn, spinach, and spices and cook until beans begin to break down.
This is my favorite quick dinner. You can add any vegetable or meat (make sure to cook it longer if adding meat!) to this recipe. I usually serve it with a piece of toast and a sunny-side-up egg on top. I used to add T.V.P. to this adding about 1 cup of chicken broth (cook until T.V.P is tender) before I became wheat-free.
