Veggie Quiche w/cheese & bacon bits (low carb)

Ingredients
8 large eggs3/4 c. milk (I used 2%)1 c. 2% shredded cheddar cheese1 c. fresh chopped spinach1/2 c. chopped green pepper1/2 c. chopped red onion (can use any kind)1/2 c. medium tomatoe, chopped3 T. real bacon bits1/2 tsp. black pepper (or white, red, etc.)
Directions
Preheat oven to 350
Spray casserole dish with cooking spray
Chop veggies and layer in dish
Add bacon bits and cheese
Whip eggs and milk and pour over veggies
Bake for 30 min. or until set

Serving Size: Makes 8 servings (casserole dish)
