Sun-dried Tomato Walnut Dressing

Ingredients
1/4 cup sun-dried tomatoes (the dried kind not oil packed)3 Tbs walnuts2 Tbs chopped shallots3/4 cup water1/4 cup balsamic vinegar1 tsp dijon mustard3/4 tsp salt1/2 tsp dried oregano or marjoram pepper to taste
Directions
Rehydrate the tomatoes-put them in a bowl of warm water for about 15 minutes then drain them

Toast the walnuts in a dry pan until they smell nutty

add all ingredients to a food processor or blender and blend till smooth

Serving Size: each serving is about 4 Tbs
