Ingredients
1- box of Uncle Ben's Chicken & Wild Rice1 - can Diced Tomatoes no salt Del Monte1 - medium red bell pepper chopped1 - large yellow bell pepper chopped1 - medium sweet yellow onion1 - cup shredded cabbage3 - fresh baby portabella mushrooms choppedseason to taste
Directions
Cook rice according to the instructions;
saute mushrooms, peppers, & onions;
boil cabbage until soft, then drain;
add cabbage and diced tomatoes to mushroom mixture;
combine with rice; mix well and serve.
