Whole Wheat Chicken Quesadillas w/chili sauce

9-10 whole wheat tortillas, 4 chicken breasts, cooked and shredded, 2-3 cups shredded Monterrey jack cheese, 2 cups sour cream, 4 cups chicken broth, 2 cans green chilis, 5 tbsp butter, 5 tbsp flour, sliced green or red peppers
Precook and shred chicken.
Preheat over to 350.
In a saucepan, melt butter and whisk in flour. Cook for 1 minute. Add chicken broth, stirring to mix. Cook until thick and bubbly. Turn off heat and add sour cream and chilis.
Mix chicken, fresh peppers (not the canned) and 2 cups of cheese in a bowl. Fill tortillas with this mixture and roll them up. Place them in a baking dish. Pour the sauce over them.
Cook at 350 for 20-25 minutes, then broil for 2-5 minutes until brown on top.
Serving Size: makes approx 16-18 servings
