2 Tbsp oil1 c shallots or onions, diced1 Tbsp garlic5 slices ginger2 stalks of lemongrass3 Tbsp curry powder1 1/4 lb boneless, skinless chicken thighs, cut into bite-sized pieces2 Tbsp fish sauce1 tsp sugar1/2 tsp salt1 tsp chili paste2 1/2 c chicken broth1 can coconut milk2 1/2 c sweet potato, cubedlime (optional)
Saute onions, garlic, ginger & lemongrass in oil briefly. Add curry, saute until onions are translucent. Add chicken, mix well & brown. Mix in fish sauce, sugar, salt & chili paste. Add broth. Boil, then simmer 10 minutes. Mix in coconut milk & sweet potato. Boil, then simmer 15 minutes or until potatoes are tender. Remove lemongrass. Serve with lime wedges (optional).
