Soyrizo Vegetarian Chili

Ingredients
2 tablespoons Extra Virgin Olive Oil 1 cup chopped carrot1 cup chopped celery1 cup chopped red bell pepper1 cup chopped onion1 cup chopped crimini or portebello mushrooms1 cup chopped zucchini1 cup chopped yellow squash1 16oz pkg Trader Joe's Soyrizo1 small can 4oz-5oz tomatoe paste2 large 32oz cans stewed tomatoes1 16oz can pinto beans1 16oz can black beans1 16oz can kidney beans1 tablespoon Chili Powder,to start with1 teaspoon Cumin Powder , to start withSalt and Pepper to taste
Directions
Chop up all veggies to approx same size. Saute in large dutch oven size pot in the olive oil until all are tender, add mushrooms last. Cook Soyrizo for approx 15mins on low-med heat in separate saute pan. Add cooked Soyrizo to veggies. Add cans of stewed tomatoes, tomatoe paste, and beans. Add spices and salt and pepper to taste. Simmer on low for approx 1 hour.
