Egg Florentine Strata

Ingredients
1 cup grated cheddar cheese2-10oz boxes frozen spinach thawed and squeezed dry12 oz. pork sausage8 oz. sliced mushrooms1/2 cup chopped green onion2 cups milk12 eggs beaten1/4 tsp salt1 cup grated swiss cheese
Directions
Heat oven to 375 degrees. Spray 13x9 inch baking pan. Layer the cheddar, spinach, sausage, mushrooms and green onions in the pan. In medium bowl beat milk, eggs, and salt until well blended. Pour over layered ingredients. Sprinkle with swiss cheese. Bake for 40-55 minutes or until knife inserted near center comes out clean.

    This was good and an easy way to increase our vegetable intake. I added chunks of whole-wheat bread to the egg mixture and let it sit for an hour before pouring it over the other ingredients. - 1/30/08
