Veggie "Rice"

Ingredients
1/2 head cauliflower, grated (about 2 cups)1 zucchini or yellow (summer) squash, grated (about 1 cup)2 broccoli stalks, grated (about 1 cup)1 cup carrots, grated
Directions
Place all veggies in a microwave safe bowl and cover tightly. Cook for 5 minutes on high to steam the "rice".

Serve in place of rice.
