Cindy's Delicious Egg Drop Soup

Ingredients
4 cups Chicken broth (I use packaged)4 whole, fresh eggs (separated) 1 cup shredded napa cabbage (only the top half) 1 med. sliced scallions 3 Tbsp chopped cilantro (with stems)1/2 cup avocado (OPTIONAL)
Directions
Bring water to a boil, add chicken boullion. Cook 2-3 mins then turn down to med. heat. Shred cabbage, slice scallion and chop cilantro then place in boiling broth. Cook for 5 mins and then turn down to a slow roll.

Separate eggs and add yolks immediately. (DO NOT whisk the white or you will get cooked foam). Once the yolks have cooked for about 5 mins, slowly add the whites in a strand while stirring the broth. Let simmer on a slow roll for about 5 mins.

Serving Size: makes 4 (1 1/2 cup) servings
