My Diet Cabbage Soup

Ingredients
4 tbsp olive oil2 cups broccoli slaw1 med zucchini sliced and quartered1 large carrot, peeled, sliced and quartered2 large celery stalks , cut in half and dice8 large stalks of kale, vein removed and chopped1 medium onion, chopped2 small beets, blanched, peeled and chopped1 lrg red bell pepper, pitted and chopped2 pots Knorr Homestyle chicken stock4 cups of distilled water1 bottle of V8 low sodium vegetable juice
Directions
Add oil to large pot. Saute vegetables according to density. Add Knorr chicken stock, mix well. Add V8 and water. Simmer for 2-3 hrs on low heat.
