Cindy's Savory Plantain Soup

8 Cups WaterChicken Boullion, follow pkg recipe3 Med. Plantains, sliced 1" thick2 Med. Potatoes, 1" cubes2 Med. Celery stock w/greens, 1" pieces1/2 white onion, sliced or chopped1 Cup Kernel Corn1 tsp Extra Virgin Olive OilS&P to taste
In a large stock pot, bring water to a boil, add boullion and cook for 3 mins, lower heat to medium roll.
Add vegetables except the plantains, see below... This will slowly boil for about 10 mins.
While that is boiling, add plantains and olive oil to saute pan and lightly brown both sides. Add these to the pot and lower to a slow roll. Cook for about 10 mins.
Serving Size: Makes 8 2-cup servings
