Fish Curry

Ingredients
1/2 cup Olive Oil2 large Onion sliced2 tablespoon finely chopped Ginger4 Cloves fresh Garlic thinly sliced1 tsp. sea salt1 Tbs. garam masala4 tsp. Paprika1 Tbs. teaspoons Turmeric Powder1 cup chicken stock or water788 g haddock1 1/2 cups coconut milk40 ml Lime juice
Directions
Heat olive oil in a small frying pan, add onion, ginger, garlic and salt and sweat over low-medium heat for 10 - 15 minutes, stirring occasionally. Add spices and cook, stirring constantly for 1-2 minutes. Add stock and simmer for 5-10 minutes. Add fish to pan and stir gently to cover fish with sauce and simmer for 2 minutes. Add coconut milk and simmer till hot. Add lime juice, remove from heat and stir gently. Serve with steamed rice.
